First things first I just have to add how wonderful the bf is.
Last night at work he told me he had a few surprises at home for me… I hate waiting and at this point I still had 7 hours of work to go before I could find out… but he gave in and sent me these two pictures:
A new chair for our patio. Yay now i can lay outside, kick my feet up, and
kill time blog.
and he put pot stuff in the flower beds. (:

I don’t know how or when to plant these bad boys but I’ll be doing some research once I get some stuff done around the house. Thanks babe!
Last night I also had a pretty sweet 11 pm newscast. I got to do a camera shot i’ve always wanted to do andddd I even got a gold start for not dropping/adding any promos (:
Lets just say that is very unusual for me so i’ll probably be framing that bad boy! (:
I woke up at 8 am. Got the bills together. Ate some strawberries before the gym.
yum. I knew I had to eat something before working out because I bought a magazine which means I was going to do 1 hour of cardio and call it a day but on an empty stomach that feels like a lifetime.
While looking through my Self Magazine.
They had this section for how to Drop 10 pounds and they had recipes on meal plans for the day and it looked so good. They had a lot about Quinoa (Which we all know that I have just started getting into) and Edamame (Which Steph and Lynda got me into) but I don’t know many recipes that involve them.
Well Day one’s breakfast had all the ingredients I had at home so I had to try it.
Doesn’t it look so good? Well I wish mine looked as good as it tasted haha. I’m just awful with anything with the word pancakes.
First I made the rest of the Quinoa that I had in the cupboard even though I didn’t need it all for this recipe but I knew I would finish it off sometime this week.
While that was cooking I combined the other ingredients
– 2 egg whites
– 1 tsp brown sugar
– 1/8 tsp vanilla
– 1/4 cup milk
– 1/2 cup of cooked Quinoa.
My batter was really runny so I was really worried haha. but I poured some of it out and just put it all on the skillet in one piece. Then kinda just flipped it over a couple of times. haha. At the end it looked like this:
Doesn’t it just look like the pancakes you make.. or how about the picture in the magazine? haha. Good news is it was DELICIOUS and I would make it again in a heart beat! I added some bananas on top and a little bit of syrup. I also paired it off with some warm coffee.
The magazine has a lot of good recipes in them I will have to sprinkle them in my posts.
Now i’m off to do some cleaning, make breakfast for the week for Eric, play with Harleyyy, make dinner, do some research on florida/my new garden, and get ready for the last day of dodgeball reffing. Now that is something to be happy about. haha.
