Coffee Cake

Today I made Eric’s breakfast for the week…. Coffee Cake.
I found the recipe off of pinterest.

Things you need:
2 tbsp granulated white sugar
1 tbsp instant coffee
1 tbsp cocoa powder
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
8 tbsp unsalted butter, softened
1 cup granulated white sugar
3 eggs
2 tbsp vegetable oil
1 cup sour cream
1 tsp vanilla extract

Preheat the oven to 350 degrees
In a small bowl, mix together the sugar, instant coffee, and cocoa.

In another bowl, whisk together the flour, baking soda, baking powder, and salt.
Using an electric mixer, cream together the butter and sugar.
Add one egg at a time
Add vegetable oil and mix a little
Then Beat in one third of the flour mixture, half of the sour cream, another third of the flour mixture, the other half of sour cream, and then the last of the flour.
Add the vanilla and mix for another minute or two, scraping the sides with a spatula.

I used a cake pan instead of a bunt can like the recipe did.
Pour half of the cake mixture into the pan
Then add the coffee/chocolate mixture on top.
Finish it off with the rest of the cake mixture

and swirl it around with a spatula. It looks pretty cool.
Since I cooked it with a cake pan my timing was a little off. I first put it in for 15 minutes then probably another 5 until it was done.

I had a hugeeee piece for lunch. It was really light kinda like angel food cake. It was good i’d probably make it again.
